"Princess Kaori" is rice for curry that was developed over a period of 10 years in Tottori Prefecture, which has the highest curry consumption in Japan, with the aim of "making rice specifically for curry that suits Japanese people!"

This is an original brand of rice from Tottori Prefecture that was created by crossing "Princess Sally," which inherits the aroma of the high-quality Indian fragrant rice "Basmati 370," with "Inochi no Ichi," a rare variety of "Koshihikari."

Hidenori Shioda of Daisen Town, Tottori Prefecture, grows these vegetables without the use of pesticides or chemical fertilizers, relying solely on the fertile soil of Mt. Daisen and the power of bacteria.

Princess Kaori is somewhere between the light Indian rice and the sticky Koshihikari. Compared to Koshihikari, the grains are long and thin, with a chewy texture that is firm and chewy. Even when it absorbs moisture, it doesn't get sticky and blends well with curry. The sweetness and umami of the rice increases the more you chew it, deepening the flavor of the curry. It is filling, but not heavy and leaves you with a light aftertaste.

Like pre-rinsed rice, it can be cooked without rinsing or soaking. If you cook it quickly with less water than usual, it will become flaky and have a better texture when combined with curry.

It has a fragrant popcorn-like aroma and is easy to eat with little stickiness, making it a big hit with comments such as "My kids only eat rice!"

Not only can it be used as curry rice, but also for fried rice, paella, soup, and rice with raw egg. It is also recommended to eat it with juicy, oily Chinese dishes such as mapo tofu. It goes well with soups and sauces, and is delicious as a porridge to finish off a hot pot, as a porridge with sea bream, as doria or risotto. A simple salted rice ball is exceptional, allowing you to fully enjoy the delicious aroma.

The person who grows Princess Kaori is Shioda Hidenori.

As a rice farmer with a long history and a curry lover, he encountered Princess Kaori, which was developed by the prefecture, with the desire to "produce rice that would make curry taste even better", and started cultivating it with reduced use of pesticides. In order to produce safer and more reliable rice, he switched to pesticide-free cultivation from the second year.

In order to bring out the wonderful fragrance of the variety, it is grown in the fertile black soil known as Kuroboku, which spreads across the foothills of Mt. Daisen, using only pure water from the mountain, natto bacteria, and rice bran.

The majority of the work is done by hand, and just weeding out is a lot of work, but to make the rice plumper and sweeter and more flavorful, they are dried in the sun using the traditional hade-boshi method. Furthermore, by storing the rice in its husk form and letting it mature, it becomes chewier and more chewy, and its sweetness deepens.

Shioda-san is highly trusted by curry restaurants in Sanin where there are long lines, and is also a popular attendee at popular markets all over the country. Due to his warm personality, various helpers from inside and outside the prefecture, including curry restaurants and prefectural officials, gather for the rice harvesting work called "Ina Curry", and "Oyama Princess Kaori" is created with the help of many people.

With major outdoor brands now carrying it, word of the deliciousness of shiotamai is now spreading from Sanin to all over the country.
