This is a rare domestic rye flour grown with the rich blessings of Hiruzen.
The producer is Masatoshi Tanimoto of Maa Farm, which grows its produce in the mountains of Sekigane, Kurayoshi City, Tottori Prefecture, using the power of nature without the use of pesticides or fertilizers.
Rye is said to be difficult to grow, and there are very few producers in Japan. The rye that Tanimoto grows in the harsh environment of Sekikin has a gentle taste without any harsh acidity. It is fragrant, finely textured, and has a deep, elegant flavor that spreads softly.
It goes well with sourdough bread and baguettes, and also with scones, cookies, and crackers, taking advantage of its fragrant texture. For sandwiches, it also pairs well with semi-hard natural cheeses such as Gouda.
It is high in nutritional value, including dietary fiber and B vitamins, and like Dinkel wheat, has a low GI. It is absorbed gently, so it is easy on the digestive system.
The gluten content is very low compared to wheat or barley. This variety is recommended for those who are not allergic to wheat but are avoiding regular wheat bread for health reasons.
Since the vegetables are grown naturally without the use of pesticides or other agricultural chemicals, they may contain insects.
If insects appear, remove them by straining the product through a sieve before using.
Avoid high temperatures and humidity, and be sure to store in the refrigerator after opening. In summer, please store in the refrigerator even before opening.

RYE WHEAT

Rye has difficulty forming gluten and does not rise easily on its own, so it usually ends up with a dense, heavy texture. The rye grown by Tanimoto contains just the right amount of air and rises softly.
Even a small amount creates a rustic flavor and richness, and it has been very well received by bakers, who say it has a "refreshing acidity" and is "easy to use."
It has high water retention, so it stays moist and delicious even the next day.


Maa Farm
Masatoshi Tanimoto grows mainly reduced-pesticide rice in Sekigane, Kurayoshi City, Tottori Prefecture.
Located close to Hiruzen, which straddles the border between Okayama and Tottori prefectures, the large temperature difference between day and night and the cold water help grow strong, delicious rice and wheat.
What is important to Tanimoto is to "watch over them without interfering too much."
The whole family is involved in farming with the goal of "growing food that will make people healthy when they eat it."
