Honey harvested from the flowers of acacia, also known as the "Queen of Honey." With a clean, sweet taste and little peculiar flavor, it is a particularly popular variety in Japan. Among the many acacia honeys available, Les Cloutés honey has a rich flavor and wonderful aroma that will delight even the most dedicated acacia honey fans. With a soft, elegant flavor and a faint aftertaste, the gentle, mellow sweetness is familiar to the body.

Le Querce is a family-run beekeeping company located near Turin in the Piedmont region of Italy. It was founded in 1998 by Giuseppe Perlino , who wanted to put his passion for beekeeping into practice .

It is made by traditional migratory beekeeping, collecting honey from the untouched and fertile valleys of Piedmont and Aosta Valley. The honey is extracted from the hives filled with honey, put into a centrifuge , dehumidified and filtered , heated at 40°C to prevent the nutrients from being destroyed (so-called non-heated) , stored in aging tanks , and bottled . Through this process, the blessings of nature and careful work are used to create a sparkling honey. Because it contains little glucose and is less likely to crystallize, it maintains its viscous liquid state even in the cold winter.

Raw, unheated honey is a simple sugar that is easily digested and absorbed, so it quickly becomes energy in the body. It is said to not only help with fatigue, but also has anti-inflammatory properties that can ease stomach pain and inflammation from injuries, and improve bowel movements. Honey is mentioned in Ayurveda, the traditional Indian medicine, and in China's oldest pharmacopoeia, and has been considered a universal remedy since ancient times. The idea that everyday foods can become medicine has not changed since ancient times, and a healthy daily life may begin in the kitchen.

High Mountain Honey

High Mountain Honey is honey harvested at altitudes of over 1,500m. Every June, we let our bees graze in the pastures for a month to harvest the honey.

It is also the culmination of the efforts of beekeepers who move in tune with the rhythm of nature, such as the blooming of mountain flowers.

Mobile beekeeping in high mountains is riskier and produces less than fixed beekeeping, so there are fewer people doing it.

The beekeeping is also known for producing delicious, high-quality products, and is certified by Slow Food Presidio, which supports foods that are in particular at risk of disappearing.

How honey is made

Traditional acacia, chestnut blossom, dandelion and azalea are cultivated through mobile beekeeping.

After collecting honey in the valley rich in nature,
The frames are removed from the hives containing the honey, put into a centrifuge to extract the honey, then dehumidified and filtered, then heated at 40°C to prevent the nutrients from being destroyed (so-called non-heated).
