This flavorful coarse salt is made using only the power of the sun and wind in salt fields with 1,500 years of history.

It has a mellow flavor that is rich in minerals, and when added to soups and other simmered dishes, it adds depth and richness to the flavor.

It is also recommended for making bread, sweets, and shio-koji. The grains are large, so if you are adding it to dishes that do not require cooking, such as salads, it is better to grind it finely in a mill so that the flavor blends in more easily.

Coarse salt is salt that has accumulated at the bottom of the salt fields. A special wooden tool is used to create waves from various directions, and the salt is raked up by the force of the waves. It is a very nerve-wracking job, as the salt will get mixed with soil if it touches the bottom of the salt fields. La Salage de la Vertonne is located in the marshes of Olonne Island, on the Atlantic coast of the Vendée department in western France. It is a very small winery run by two people.

The company was founded in 2005, but the salt fields date back 1,500 years. After they disappeared 50 years ago, a group of young people fascinated by salt production redeveloped and revived the fields.

Sea salt is drawn into the salt fields and slowly crystallized using only the power of the sun and wind.

It is the oldest and most prestigious organic organization in France, with over 1,400 members.
To obtain organic certification, not only are the ingredients inspected, but there are also some standards that must be met, such as the following:

FLEUR DE SEL

- Salt Flower -

This refers to the smallest salt crystals that first float to the surface of salt fields when the salt concentration has increased, and in France it is called "fleur de sel."

The crystals that gather due to the force of the wind are carefully scooped up by hand, making production inefficiency low, and only about 3% of the total amount of salt is harvested, making it an extremely valuable product.

It has a higher mineral concentration and a sharper saltiness than coarse salt.
